Cream of Mango Soup


  • 2 mangoes, peeled, seeded, and cubed (about 2 cups)
  • 2-3 tablespoons sugar to taste
  • 1 lemon, zested and juiced
  • 1 1/2 cups fat-free half-and-half


  1. Place mango cubes, sugar, lemon juice, lemon zest, and juice and half-and-half in a blender or food processor.
  2. Blend just until smooth and creamy.
  3. Garnish with blueberries or strawberries if desired, and serve chilled.

3 servings (about 1 cup)

Nutritional Information:
Per serving: 206 calories, 10.5 g protein, 42 g carbohydrate, 0.6 g fat, 0.2 g saturated fat, 5 mg cholesterol, 2 g fiber, 150 mg sodium. Calories from fat: 3 percent.
