Easy Antipasto

This is a fun and quick way to get your veggies as a snack or with your entree.

Ingredients:

  • 1 tablespoon light Italian dressing
  • 1 cup cooked vegetables (brocolli and cauliflower florets, green beens)
  • Fresh jicama
  • Tomato quarters

Preparation:
1. Dress lightly cooked vegetables (broccoli and cauliflower florets, green beans) and fresh jicama and tomato quarters, etc. with some light Italian dressing.

Yield:
1 serving

Nutritional Information:
1 tablespoon (about what it takes to dress 1 cup of veggies): 30 calories, 3 g fat (0.5 g saturated fat), 130 mg sodium.
