Warm sauces

'Lite' White Sauce

Ingredients:

  • 3/4 cup skim milk
  • 1 heaping tbsp corn starch or potato flour
  • Salt and pepper to taste

Preparation:
1. Mix the cornstarch, little by little, with the cold milk. Keep stirring while mixture simmers.
2. Remove from the stove when the sauce starts to boil.
3. Add: nutmeg, curry or saffron, salt, pepper, or a pinch of grated Swiss cheese to create different tastes.
4. Pour over white meat, poached fish, hot vegetables (cauliflower, zucchini, etc.), pasta, beans or rice.

Yield:
4 servings
